Recipe: Microwave Peanut Brittle

I’m so sorry that I’m not posting as much today, but I’m in the kitchen making goodies!   I thought I would share this recipe for the easiest, yummiest Peanut Brittle that I’ve ever made.

1 1/2 cups peanuts (I use lightly salted)
1 cup sugar
1/2 c. light Karo Syrup
Pinch of Salt
1 T. butter
1 tsp. vanilla
1 tsp. baking soda

In a Pyrex Bowl, mix the first 4 ingredients and stir until the peanuts are coated.

Microwave for 4 minutes and then Stir.

Microwave for 4 more minutes.  Stir in 1 T butter.

Microwave for 2 more minutes.

Pour in Vanilla and Baking Soda.  Stir vigorously and work quickly to spread on a greased cookie sheet.  Allow the candy to cool and then break into pieces.

(I warm my cookie sheet slightly in the oven to make the Peanut Brittle spread more easily).

Looks delicious Robin! I’ve never tried making Peanut Brittle, but I think I can do this one :)
