Banana Nut Bread
With school now in full swing, I’m trying to think some great alternatives to the traditional breakfast choices. When I saw my latest bunch of bananas turning brown, I decided to try Banana Nut Bread. Not only does it work great for a quick breakfast treat, but I can also tuck a slick into the lunch box for a yummy surprise.
1 c. (2 sticks) butter, softened
2 c. sugar
3 c. all purpose flour, sifted
1/2 tsp. salt
2 tsp. baking soda
5-6 ripe bananas, mashed
1 tsp. vanilla extract
1/2 c. – 1 cup chopped pecans
Cream butter and sugar until well blended. Add eggs, 1 at a time beating until blended. Add flour and other dry ingredients. Gradually fold in the mashed bananas and stir in pecans. Add vanilla extract.
Pour batter into 2 greased loaf pans. Bake at 350 degrees for 1 hour.
